Stir Fry Vegetables in a Wok

Stir Fry Vegetables in a WokStir frying vegetables is one of the easiest and tastiest cooking methods.  My girls will pretty much eat anything stir fried.  Their favorite is stir fried leafy green vegetables.  The whole cooking process will take you 2 minutes so you have to prepare and measure everything beforehand.  Enjoy!

Wash and pat dry vegetables.  Crush garlic.  Measure out water or broth and set next to stove.  Measure out salt and set next to the stove.

Stir Fry Vegetables in a WokHeat wok to medium high heat.  Add oil/fat, then garlic.  Cook garlic until it starts to turn golden brown and the smell of garlic fills the air.

Stir Fry Vegetables in a WokAdd vegetables.  Cover as much of the vegetables with the oil/fat by turning the bottom vegetables to the top and top vegetables to the bottom, then stirring.  The stirring is why it’s called “stir-frying”.

Stir Fry Vegetables in a WokAdd water or broth.  I prefer to use homemade bone broth if I have it because of its flavor and nutritional value.

Stir Fry Vegetables in a WokCover and cook for 30 seconds.  Use a cover that completely encloses the vegetables.

Stir Fry Vegetables in a WokUncover and add salt.  Thoroughly mix the salt into all of the vegetables.  Cover again for 15 to 30 seconds depending on desired tenderness.

Stir Fry Vegetables in a WokUncover and stir for another 15 seconds.  Vegetables should have wilted leaves and firm to tender stems depending on how long you covered them for.

Ingredients
  • 1 pound vegetables
  • 2 crushed garlic cloves
  • 1 tablespoon oil/fat (use a high heat oil/fat like ghee, animal fat, etc)
  • ¼ cup water or broth
  • 1 teaspoon salt
Instructions
  1. Prepare and measure all ingredients before you start cooking. Wash and pat dry water from vegetables. Crush garlic. Measure out the water or broth and set next to the stove. Measure out the salt and set next to the stove.
  2. Heat wok to medium high heat. You will know it's hot enough when you flick water into the wok and it dissolves within 2 seconds.
  3. Add oil/fat.
  4. Oil should be heated after 10 seconds, then add garlic. If oil starts to smoke, it is too hot. Stir for 10 seconds in the oil until the garlic starts to turn golden brown and the smell of garlic fills the air.
  5. Add vegetables.
  6. Cover as much of the vegetables with the oil/fat by turning the top vegetables to the bottom and the bottom vegetables to the top, then stir for 1 minute.
  7. Add the water or broth.
  8. Cover and cook for 30 seconds.
  9. Uncover and add salt. Thoroughly mix the salt into all of the vegetables.
  10. Cover again and cook 15 to 30 seconds depending on how tender you like your vegetables.
  11. Uncover and stir for 15 minutes. Vegetables should have wilted leaves and firm to tender stems depending on how long you covered them for.
  12. Turn off heat and plate immediately.

Crushed Garlic

Crushed GarlicGarlic is a main ingredient in Chinese cooking.  It’s used to infuse hot oil, marinate meat, flavor dumpling filling, etc.  Garlic is always crushed before using it to cook to release the oils for ultimate flavoring.  There are also health benefits associated with crushing garlic.  Here is a quick tutorial on how to easily crush garlic cloves.

Start with garlic peeled from the bulb.  You don’t need to have the garlic peeled so neatly.  I just did it for the picture 🙂

Crushed GarlicPop the garlic out of its skin by laying a knife with a large blade over the pieces.  Hold the knife still with one hand and use a fist to hit the knife blade.  Do this one or two times until you see or feel the garlic crack from its skin.

Crushed GarlicNow that the skin is popped you can easily peel the garlic from it.

Crushed GarlicThe garlic could be crushed enough with the initial hit to pop the skin.  If you need to crush it more, repeat the process of placing the blade over the garlic and hitting it with your fist.

Crushed GarlicHit it one to three times to get the crushed consistency in the picture above.  Your garlic is ready to throw into hot oil for infused flavor or chop for marinating or cooking.

Our Disney Story

DisneyWe didn’t tell the girls we were going to Disney until the morning of our flight.  My sister created an invitation from Elsa and Anna from their favorite movie, Frozen, inviting them to come and visit.  Since the girls are only 2 and 5, they didn’t understand what Disney was. It was only when they found out Elsa and Anna would be there, they got excited.  Having this invitation would actually be a cause of a problem at Magic Kingdom…

My in-laws planned this trip for the whole family.  On our trip, we found out my sister-in-law is pregnant!  It was a total surprise to me because just a couple weeks ago she was telling me they were just starting to try.

Our agenda was jam packed.  The first day we were going to Animal Kingdom, second day would be at Magic Kingdom, then Sea World, and the last day would be at Epcot.  We were on a mission to conquer Disney World!

DisneyWe began our day at Animal Kingdom enjoying some rides.

DisneyWe rode the Kilimanjaro Safaris open-air van to see animals.

DisneyThe girls loved the enormous fish tanks.

DisneyThe day ended with ice cream, ice pops, and an Animal Kingdom parade.

DisneyDay 2: Magic Kingdom.  It ended up raining most of the day but we tried hard not to let it get in the way of our fun.

DisneyWe got up really early to get to Magic Kingdom before it opened and be the first ones through the gate.  The girls occupied their time by jumping down a stone wall.

DisneyBe began the day with a breakfast at Cinderella’s castle.

DisneyJasmine from Aladdin.  This is Baby’s favorite princess.

DisneyAnd Aurora from Sleeping Beauty.  This breakfast was the highlight of the whole entire trip.  The girls loved meeting the princesses.  As a parent, it was such an amazing feeling to see how excited they were to meet the “real” princesses.  They even endured wearing their (very) scratchy Cinderella costumes.

DisneyNext Princess had an appointment at the Bibbidi Bobbidi Boutique for a princess makeover.  She got princess hair-do.

DisneyAt the end, she was a cool, rocker princess with pink hair.  She couldn’t wear her (very) scratchy Cinderella costume anymore so she wore the backup princess t-shirt and tutu instead.

DisneyOne of the attractions we did was Enchanted Tales with Belle.  This is an interactive storytelling experience where you get an opportunity to be in the story with Belle.  Princess has stage-fright so she wouldn’t volunteer to play a part, but surprisingly, Baby likes to perform.  She was Chip, the teacup.  She loved being in the show and took every possible opportunity to be near Belle.  I wish I could have used my flash to make this picture even better because it was priceless.

The line to meet Elsa and Anna from the movie, Frozen, was over five hours long.  The girls couldn’t understand why we couldn’t wait to meet them especially since they received personal invitations (eek!).  They got upset a few times during the day but thankfully there are so many distractions at Magic Kingdom, we were able to escape waiting in the long line with a promise to come back another time to see them.  Hopefully, by then the line will be less then five hours!

DisneyDay 3: Sea World.  The first performance we saw was a pirate performance.  I had to include this picture because of the huge pink walrus on stage.  Have you ever seen an animal like this?

Disney The One Ocean show is with Shamu-like killer whales.  This was an entertaining show but in the back of my mind I always wonder if wild animals are ok performing like this?

DisneyIt rained for half the day.  The girls were bundled up in their rain gear.

DisneyThis was a very brave and hungry squirrel that helped itself into different lunch bags at the stroller parking.

DisneyA’Lure, The Call of the Ocean was my favorite performance.  It was very Cirque du Soleil with all of the acrobatics.  The glow-in-the-dark dolphins the girls got during the performance was the highlight of their day at Sea World.  Simple Pleasures…

DisneyIt was so nice the performers came out afterwards so the audience could take pictures.

DisneyThe girl’s second favorite part of the day was feeding the sharks.  They loved everything about this, even touching the dead fish.

Disney At the end of the day we found the rides.  Of course we had to ride the sea carousel.

DisneyPrincess is realizing she likes roller coasters.  She is always nervous at first but once she’s on it, she’s all smiles.

DisneyWhile we wait in line, we practice jumping.  Can you guess who needs a little bit more practice?

DisneyMy Grouchy Husband and I both have weak stomachs which makes it hard for us to rides things like this boat.  My stomach is weaker then his so he usually has to ride at least some of the rides with the girls. We found out during our trip to France that Baby has a weak stomach also.    He rode this boat once with the girls but could not handle anymore.  Princess wanted to go on again so she went by herself.  This was a huge step of independence for Princess and I’m so proud of her.

DisneyOn our way out, we took a picture with Shamu and dolphin.  Baby won’t go anywhere near costumed characters but thankfully Princess just started to not be afraid to them this year.  I’ve always wondered how you can see a character a million times on the television but somehow seeing them in person is so scary.

Managing Face

Managing FaceWhen my grandmother and I chat, I sometimes share my frustrations with my Grouchy Husband’s terrible temper or challenges with my mother-in-law. I wish she would tell me “he is wrong and you should yell back at him” or “she is being unreasonable and you should not do what she wants”, but she never did. Her response was always the same, (面子), translation, “save face”.
Face is not the front part of someone’s head. Face is a complicated concept that is very important in Asian cultures. Your “face” is a combination of social standing, reputation, influence, dignity, and honor. It’s how the world around you sees you. You can “give face”, “gain face”, “lose face”, and “save face”. How you manage your face will have direct impact on your personal and business relationships.

Giving Face

Giving face is making someone look good.  It is also treating someone with respect that is above their “perceived” social hierarchy, for example, housekeeper, lawn-mower, etc.  The best way to accomplish this is by giving genuine compliments.  Doing it in front of other people will make your efforts even more successful.  Be careful, over doing this can make you look fake and suspicious.  This is my favorite “face”.

Gaining Face
Gaining face is done by your remarkable actions and behaviors.  It is also having strong, harmonious relationships where you are spoken of in the highest regard.   Worldly examples of this are getting a promotion, dressing nicely, and buying a nice car.

Losing Face
Losing face is any mistake or way that makes you look foolish to other people.  A common way of losing face is losing your temper in public.  Shouting, arguing, or causing a scene in public are severely frowned upon.  My Grouchy Husband has a bad temper and this is the ugliest personality trait.  When he gets mad in public, it not only makes him lose face but also me for being his wife.

Saving Face
Saving face is any and all ways to prevent losing face.  As frustrating as it can be, always stay calm until a resolution is met, even if you need to make a small compromise.

How to Manage Face

  • Avoid pointing out someone’s mistakes openly in public.  Instead, find a time to tell them when you are with them alone.
  • Give sincere compliments.
  • Politely refuse a gift at first, but then accept with an abundance of gratitude.
  • Show extra respect to elders.
  • When offered, always allow your host to pay for your meal.
  • Always leave your home looking clean and neat.  Comb your hair, make sure your clothes are not wrinkled, put together outfits that fit your body and match style and coloring, have a clean face.
  • Keep your parents updated on significant accomplishments, ex: high grade point averages, acceptance into high profile competitive colleges, high paying jobs, promotions, new car and home purchases.  Allow them to proudly talk your accomplishments to their friends.
  • Never lose your cool in public.  Always find a calm way to resolve issues even if you have to make a small compromise.

Top of the Mountain Lunch in Megeve France

On our last day in France, we spent the day skiing, spa-ing, shopping, and eating in Megeve, a mountain an hour away from Chamonix.  We spent the day in Megeve on the mountain, skiing, spa-ing, shopping, and eating.  To get to Megeve from Chamonix you go down a windy mountain road, then up a windy mountain road.  It was too much for Baby’s stomach so we had to make an unexpected stop in the middle of the trip to clean up throw up.  It put a damper on the trip and morning but thankfully after a pleasant breakfast and an amazing massage from a masseuse that trained in Thailand, the drive was a very far far memory.  The highlight of this day and probably the whole trip was being hosted by the Rothschild’s for lunch at l’Ideal, a restaurant at the top of the mountain you can only get to by gondola.  My brother does a lot of wine business with the Rothschild’s and they own the resort in Megeve.  I love their wine and drank a LOT of it.  Everything about this lunch was perfect and amazing.  The weather, picture-perfect view, delicious food, spending time with family…perfect.

Chamonix France: Husky Dog Sledding

ChamonixBaby is not able to ski yet (she’ll be in ski school next year) so while we were out skiing and snowboarding, she was with my mom strolling the town and being spoiled.  Even though life isn’t bad for this 2-year old, we decided to do a family activity and go husky dog sledding.  The dogs were so beautiful, their eyes were like glass.

I don’t know what my Grouchy Husband and I were thinking when we showed up with jeans, riding boots, and dress boots.  Everyone else was in full ski gear and snow boots.  It was like a scene from city slickers.

First, you are given a dog sledding lesson and then the group goes out on  a dog sled ride.  The girls and I rode in the guide’s dog sled and my Grouchy Husband had his own dog sled.  Because he is not experienced, we could not go in his sled.  We were late to the lesson because we had gone to the wrong dog sled company so my Grouchy Husband got the accelerated version. I was worried because we had seen so many people fall off their sleds.

ChamonixEven in jeans and dress boots, my Grouchy Husband did a great job on his sled.  He almost looks like a professional dog sledder in this pictures if he wasn’t wearing jeans.

The guide didn’t speak much English.  He asked us “good?” every once in a while and when we would go fast or down a steep hill, he would shout “Yoohoooo!”.  I think this is the French version of “Yahoo!”.  The girls and I would giggle every time he did it.

Chamonix France Ski Vacation: Favorite Moments

ChamonixWe just came back from an amazing ski vacation in Chamonix France.  This was a vacation of celebrations, my Dad and Uncle Ronnie’s 65th birthdays, Uncle Billy’s 64th birthday, cousin Karyn’s birthday, my birthday, meeting cousin Michael’s partner.

The vacation had a rocky start, as we were about to get off the plane, Baby threw up what looked like a week’s worth of food all over her seat, her clothes, hair, everything.  This was our unfortunate way of finding out she has motion sickness.  After the hour drive from Geneva airport to Chamonix, thankfully, this memory was quickly forgotten when we got to town.

ChamonixWe rented a two-bedroom apartment at the Le Majestic Congres.  It was a beautiful, grand, old hotel that was converted into apartments.  We booked through Chamonix All Year.  Great company, great service.  Nick, the owner, was very helpful when we had a mixup with the apartment address and Lianna pleasantly tended to all of my  obnoxious American questions.

ChamonixAfter settling in, we walked into the center of town to find a place to eat.  It was a beautiful day so wanted to eat outside.  My first meal, classic French bistro, Moule Frites with a  couple glasses of wine.

ChamonixThe town of Chamonix is fabulous.

ChamonixThere are lots of restaurants, shops (even a Chanel), and when you look up, you are surrounded by these gorgeous snow capped mountains.

ChamonixThe town is separated by a stream of water.  The girls were convinced they would see fish in the water.

ChamonixWithin the first hour into our flight, Princess had a fever.  She is like a delicate flower, the excitement of the trip and the stress of packing her choice of four things took a toll on her body.  We got a tip from the management company to shop at the SuperU in town for groceries.   It was where all of the locals shopped.  Before heading home for our first night in Chamonix, we stopped to pick up some groceries and ingredients to make chicken soup.  The chicken soup I made was so tasty.  I think it’s because of the quality and freshness of the chicken meat.

ChamonixWe flew a day earlier then the rest of my family so we decided to do some site-seeing our first full day while we waited for everyone to arrive.  We decided to take the train down to France’s largest glacier, Mer de Glace.   As parents of a 2 and 5-year old, this was not a good activity choice because after the train ride, there was a short gondola, and then over 400 steps to the glacier.  Baby wasn’t able to walk all these steps so she was on my Grouchy Husband’s shoulders.  Princess was fine walking down, walking up was a totally different story.  Did I mention it was a cold, rainy day and she was running a fever…she cried the entire over 400 steps up (I couldn’t blame her, I wanted to cry also and I didn’t have a fever).  When we finally got back to the top, I let both girls pick out a lollipop from the gift shop and instantly the whole experience walking up the over 400 steps had disappeared.

ChamonixAt the center of the glacier is a man-made ice castle.  Every year, this castle has to be reformed because of the movement from the glacier.  The girls had just seen Frozen so they were hoping to see Queen Elsa in the castle.

ChamonixAfter the long day to see the glacier, I just wanted to go home, dry off, relax, and cook dinner.  I bought pork chops from the SuperU and with the almond meal I brought from home made pan-fried pork chops.  Look at how yellow the egg yolks are…amazing!

ChamonixA couple of things from our apartment that were a must-have when traveling with small children.  (1) Washer/Drying Rack.  As I mentioned, Baby threw up on the plane ride to Chamonix.  She also threw up on the car ride to Megeve (more about this fun trip in my next blog post).  I cannot begin to tell you how thankful I was to have a washer/drying rack.  I even washed all of our clothes before leaving so I didn’t have to wash them when I got home.

Chamonix(2) Heated towel rack.   I’ve already told my Grouchy Husband that we will be getting one in the next bathroom we renovate.  I hung the hand towel to have a warm towel after washing your hands.  I hung my bath towel so I would have a warm towel after I took a shower.  I hung the floor towel so I would have a warm towel when I got out of the shower.  I hung my face towel so I would have a warm towel to dry my face.  Obsessed with the heated towel rack.  Can you tell?

ChamonixThe first day of skiing we went to Brevant.  I decided not to sign Princess up for ski school like I usually do.  I was worried about finding an english-speaking instructor and we were on vacation, so we weren’t planning on skiing the full day anyways.  She did a great job and started to parallel her skis.

ChamonixAfter snack, we decided to take the scenic route down the mountain and take lots of pictures.  One of the highlights for my Dad is skiing with Princess.  It makes him so happy.

Chinese New Year Family Festival at MOCA

Chinese New Year at MOCAAs a way to help my girls experience the culture and tradition of Chinese New Year and the year of the horse, we attended the Lunar New Year Family Festival at Museum of Chinese in America (MOCA).  I’ve recently found this museum and just love the family events.  My girls find them interesting and and they really enjoy the activities.

I recruited my brother to come with me to the family festival.  He is always overwhelmed with all of the chaos at children events but really gets into participating with them.

Chinese New Year at MOCAOne of the drop-in-art-and-craft was silk screening with Tomie Arai, the artist behind the exhibit, Portraits of New York Chinatown.  I’d never seen silk screening so this was such a treat.  I give Tomie Arai a lot of credit for creating this children’s activities.  We were all fascinated.  The whole process is actually very simple.  First, paint is brushed over the horse stencil.

Chinese New Year at MOCASecond, remove the paper with the stenciled horse.  Then you just let the paint dry for 5 minutes.

Chinese New Year at MOCAOne activity we did at the last event, Mid-Autumn Moon Festival, was chinese calligraphy.  For younger children, they put the horse character underneath the paper to trace.  Older children copy the character by site.  My Princess really enjoys the activity.

The Lunar New Year Family Festival was more crowded then the Mid-Autumn Moon Festival and by the time we got there, the lion dance performance and workshop, the main event, was full.  The girls really enjoy the crafts and these were still open so we were still good to go.  Next year, we will definitely get there early to have our choice of all activities.

Vermont Birthday Celebrations

Vermont Snow WeekendWe just got back from our annual ski weekend at my Aunt Cheryl and Uncle Ronnie’s condo in Killington, VT.  I’ve been coming here for probably the last 20 years (taking some years off because of college and pregnancies).  As always, we had a total blast.  The schedule is as follows:

  • Friday – everyone arrives.  Though, now the parents are retiring, they arrive a day early to get an extra day of skiing in.
  • Saturday – ski/ride, apres ski, shower, nap, dinner, dessert.  Sometimes not always in this order.
  • Sunday – say good bye.

All of the food we eat is homemade so everyone pitches in to make the food.  My sister is pregnant so she and her husband went snow shoeing instead and then came home early to  wrap dumplings for apres ski.
Vermont Snow WeekendSome of our spread for apres ski.  Aunt Cheryl makes an amazing brie wrapped in crescent roll.  This year she debuted two knew spreads, artichoke and crab.  Yum-mm.  I have the left over brie and crab in the refrigerator now.  At the other table, we had dumplings and chili.  After a long day of riding, I feel like I inhale the food.  Then my stomach finally catches up to all I’ve eaten and I feel totally full, then have to take a nap.  Now that I have two little ones, this is harder to do, but I at least try to close my eyes for 5 minutes.

Vermont Snow WeekendWe come together every year around this time to celebrate my dad’s, Uncle Billy’s, Uncle Ronnie’s, and my brother’s birthdays with multiple birthday cakes.

My Princess was so excited to go skiing and she did amazing in ski school and on the mountain with us.  She is getting so good and feeling so proud of herself.  These are the mama moments you can’t even talk about without crying because they are so wonderful.

I am so thankful to have Uncle Ronnie (my Dad’s best friend from elementary school), Aunt Cheryl, Sami (their daughter), and Michael (their son), in our lives.  I love that our families are growing together and we will be taking our first family vacation in Chamonix France in seven weeks!

Red and Gold Tissue Paper Tassel Garland

Tissue Paper Tassel GarlandTo prepare our home for Chinese New Year, besides cleaning, we decorate.  You are suppose to clean your home and then decorate but I usually do it at the same time because I’m not that organized.  Chinese New Year decorations are red and gold because:

  • Red – considered the luckiest color.  Symbolizes good luck, reunion, health, happiness, harmony, prosperity.  It represents all things positive in Chinese culture because of its association with fire, the sun, brightness, life and energy, the yin in yin and yang: .
  • Gold – symbolizes wealth and good fortune.

My Princess loves crafts so I scoured the internet to find something we could do together and wouldn’t be that hard for her little 5-year-old hands.  I found a DIY (Do it Yourself) tissue paper tassel garland from HGTV that was simple and we could customize to red and gold for Chinese New Year.  I needed one additional supply, tape, because I couldn’t get the tassel loop to stay without it.  My 36-year-old hands aren’t that DIY experienced.

Materials needed:

  • 20×20 or 20×24 tissue paper or mylar, makes 2 tassels.  Note: tape doesn’t stick that well to mylar
  • scissors
  • tape (optional)
  • ribbon or cord

  • Fold a piece of tissue paper in half and in half the other way so it looks more like a square.
  • On the edge where the fold is, draw a line 1 inch below the fold.  You can faintly see my line drawn in pencil.

  • Cut strips toward the fold until you get to the line.  In the HGTV instructions, you will see the fringe is very skinny.  Even with the grown-up scissors, it was easier for My Princess to cut thicker strips.  Either way, the tassels look great.

  • Once all of the fringe is cut, unfold the paper once and cut along the fold to create two tassels.

  • Unfold one of the tissue papers.  Begin rolling one end tightly.  I used two hands to roll but only used one hand to take the pictures (other hand holding the camera).  Continue rolling to the end.

  • Fold the middle in half and twist to create a loop for hanging.

  • I used a piece of tape to hold the loop in place.  You can also use a piece of ribbon or cord.

  • The tassels will be tangled from rolling so you have to slowly untangle.

Creating the Garland:

  • Cut a piece of ribbon or cord 3 to 4 inches longer then the area you are hanging the garland.
  • Tie the tassels 3 to 4 inches apart.  Leave enough room so the tassels don’t crowd each other.  Don’t feel like you need to create a color pattern.

  • Use a pushpin to hang the ribbon or cord.

Tissue Paper Tassel GarlandEnjoy your Chinese New Year tassel garland!  It’s easy enough to put away and put up again next year.  The best thing about the garland is everyone who has seen it has been so impressed and that puts the proudest look on My Princess’ face.
